THE SAINT

This modern restaurant, awarded an AA rosette this year, aims to create a relaxed and unpretentious atmosphere for sampling French-based Mediterranean cuisine.

Proprietor Alexander Cadogan uses locally-sourced ingredients, all GM and additive free, with fish coming fresh from Shoreham and other ingredients harvested by small organic Sussex producers.

A set lunch menu offers one course for £7.95, two courses for £11.95, and three for £15.95. Typical mains might be pan-fried Gurnard or the signature dish of slowcooked crispy pork belly with rosemary jus.

Set evening menus cost between £13.95 and £19.95 in the week, or £21.95 for two courses and £26.95 for three at weekends.

Main courses include the traditionally hung Sussex-reared rib of beef served with duck fat roast potatoes and red wine jus, and pot roast pheasant with apple and pancetta.

Desserts range from the decadent chocolate and cherry tart, served with raspberry sorbet, to lighter ice creams and sorbets.
