Tucked away in the village of Rusper is Purus restaurant. It’s not a short walk or easy taxi ride away but the 40-minute drive through the West Sussex countryside is a small effort for an incredible reward.
Starters range from panfried quail with kohlrabi salad (£8), to saute cepes with globe artichoke (£9), while options from the main course list include wild sea bass with buttered baby fennel, lobster ravioli and lobster essence (£16), and pan-fried fillet of beef with Jerusalem artichoke puree (£23).
Among the desserts on offer are the delicious chocolate, orange and Baileys Kaiserschmarrn with chocolate ice cream (£6.50) and rhubarb with vanilla chestnut puree (£6). And why not sample the range of unusual ice creams and sorbets, with flavours including basil and pistachio, and even bee pollen?
A set three-course menu costs £25 per person but ifyou’re feeling decadent, try the Tasting Menu, which costs £55 and entitles you to six courses, plus a surprise treat from the chef.
