Environmental campaigns, hunting for Japanese beans in Sussex and the growth of Yo! Sushi. It has been an eventful time for Moshi Moshi but this hasn’t fazed founder/owner Caroline Bennett.
While other chains push through aggressive expansion policies, the woman behind the small-but-perfectly-formed sushi chain feels settled and confident about its place in the market. “We’re not interested in global domination,” says Caroline.
For now, her priorities lie with greener issues. When the first branch of Moshi Moshi opened in London in 1994, she hadn’t thought much about the environment. But as the restaurant became increasingly popular and another three branches opened, Caroline began to consider its effect on the planet’s resources.
Now she has become heavily involved in campaigns to prevent the depletion of fish stocks, is part of the Invest in Fish campaign and has become somewhat of a spokesperson for ethical eating.
“We’ve opened people’s eyes to the delights of sushi, so you can’t help but think about what that brings with it,” she says. “It’s all a reflection of our concern about the fish population.”
Sustainable eating has become a priority for the company and will be its main drive for the future. As well as thepreservation of fish supplies, Caroline is passionate about using organic, locally-sourced products, which is not an easy feat when you run a Japanese restaurant. “We’ve started using local suppliers of vegetables, which would normally be flown in from Japan and China at great expense to the planet. It’s much tastier if it’s grown locally.”
On offer at Moshi Moshi are new chef creations deep-fried bamboo shoots with ume plum, raw spring rolls, and salt and sansho pepper crispy fried Cornish fish (its fried bones are meant to be eaten with the fish). Highlights of the dessert menu include the popular green tea brulee and the orange steamed custard.
The restaurant also provides a takeaway service, with mini packs from £3 and party platters for £14.50. Moshi Moshi members are treated to a variety of discounts and special offers.
