Founded in 1996, Yo! Sushi was one of the first conveyor belt restaurants in England – and it has reaped the rewards, with the opening of more than 30 UK branches and eight more stretched across Europe and the Middle East.
Yet they do their best to give each branch its own character and the Brighton restaurant has a customised Yo! Sushi ice cream van, which acts as a takeaway kiosk. Customers can choose from a range of dishes, including traditional Japanese sashimi (raw fish), basic maki rolls and nigiri (sushi rice with toppings), right through to hot staples such as chicken katsu curry, salmon teriyaki and spicy beef ramen.
Using the nifty conveyor belt method, which has been around in Japan since the Sixties and is increasingly popular in the West, there is a daily repertoire of 117 dishes, 40 per cent of which are hot. A mixture of traditional Japanese and Western cuisine, dishes are fresh, seasonal and prepared daily.
At Yo! Sushi, no plates are left on the conveyor belt for more than two hours and all the food is prepared in front of the diners, giving you the chance to watch the skilful sushi chefs at work before you eat.
When you’ve finished eating, your empty plates, which are colour coded for pricing simplicity, are collected and counted up before you pay your bill.
Dish prices range from £1.50 to £5 per dish, making Yo! Sushi excellent value for money. Although the chain element of Yo!Sushi might sound off-putting, the restaurant still manages to remain accessible, with friendly, smiling staff and a lively and informal atmosphere.
